no mercado perguntámos qual a melhor maneira de preparar a cavala. processo simples e que seguimos. pois a cavala não exige muito trabalho, basta retirar as tripas. só não cortamos a cabeça, como sugerido no mercado. e ainda bem! pois foi cabeça, foi tudo..!
hoje de manhã, dei um salto ao mercado. mesmo a tempo de comprar cavalas frescas. que grelhadas foram. um regalo!

para 10 bolinhos
A Primavera e o Verão já passaram. Uma semana de sol, "calor", céu azul e agora até para o ano. É assim aqui por estes lados.
Contudo eu continuo com refeições mais frescas e leves, um costume para esta época do ano. Assim sendo, inspirado pelo Nigel Slater, the kitchen diaries, segui esta receita de bolinhos de peixe para apreciar no pátio com molho de iogurte e uma salada. As únicas alterações à receita original, são: o facto de usar não usar mostarda, usar mais farinha para moldar os bolos e em vez de fritos, foram grelhados numa frigideira.
500 g de peixe
1 clara de ovo
um punhado de endro
1 c. sopa de farinha (e mais para envolver)
sumo de 1/2 limão
azeite
sal e pimenta
para servir
fatias de limão
iogurte com endro
Começar por cortar o peixe em bocados finos. Por numa taça a clara, algum endro finamente cortado, a colher de farinha e o sumo do limão, misturar tudo muito bem e temperar com sal e pimenta.
Deixar repousar por 10 minutos e moldar com as mãos enquanto se envolve farinha para ajudar na consistências.
Por um bocado de azeite numa frigideira em lume médio-forte e deixar cozinhar por 5 minutos de cada lado até estar dourado por fora e cozinhado por dentro.
Servir com as fatias de limão e o molho de iogurte com endro e temperado de sal e pimenta.

However I continue to eat more lightly and fresh, a custom for this time of the year. So, inspired by Nigel Slater, the kitchen diaries, I decided to go for this fishcakes recipe to enjoy outdoors on my backyard with yoghurt sauce and leaves. I made some changes to the original recipe: did not use mustard, use more flour to shape the cakes and instead of fried were grilled.
ingredients
500 g fish
a large egg white
a small bunch of dill
1 tbsp of flour (and more to shape)
the juice of 1/2 lemon
olive oil
sal and pepper
to serve
lemon wedges
thick yoghurt with dill
Start by chopping finely the fish. Put in a bowl with egg white, a couple of tablespoons of finely chopped dill fronds, the tablespoon of flour and the lemon juice. Then mush together with a generous grind of salt and pepper.
Let it rest for 10 minutes and squash spoonfuls of the mixture together lightly with your hands and put some flour to help the consistency.
Get a little olive oil in a frying pan on a medium-hot heat and let cook each side for 5 minutes until it's golden on the outside.
Serve with some lemon wedges and yoghurt sauce with dill and seasoned with salt and pepper.

Quiche de Bacalhau e Cottage

Eu sei que não tenho andado pela blogosfera faz muito tempo, mas estou a tentar "voltar". Tenho algumas receitas prontas e o meu entusiasmo pela comida não se dissipa, bem pelo contrário, continua a aumentar.
Nestes dois meses, passaram-se viajens repentinas a Portugal, semanas cansativas de trabalho, férias em Edinburgh e tantas outras coisas.
Esta receita tem para lá de dois meses, ainda é do tempo das visitas em fevereiro!! Já sabem o procedimento de demolhar a posta de bacalhau 3 a 4 dias antes e ir mudando a água, por isso atentem no resto.
ingredientes:
1 posta de bacalhau (cerca de 300 g)
1 cebola
2 dentes de alho
3 c. de sopa de azeite
300 g de queijo cottage
1 iogurte natural
3 ou 4 ovos
1 c. de sopa de sal
2 c. de sopa de coentros frescos
massa quebrada (uma embalagem)
Começar
por picar a cebola e por num tacho com azeite e o alho. Vai ao lume por 3 minutos. Logo de seguida
juntar o bacalhau previamente esfiado e deixar cozinhar por
cerca de 10 a 15 minutos.
Enquanto isso bater o queijo, com o iogurte natural, os ovos, e os temperos - sal e coentros, até estarem devidamente misturados.
Por fim, por a massa quebrada numa tarteira apropriada para o forno, cobrir com o bacalhau e no topo deitar a misutra de queijo.
Levar ao forno cerca de 30 a 40 minutos, a 200º graus, até estar bem cozinhado.

1 piece of cod (approximately 300 g)
1 onion
2 garlic cloves
3 tbsp. olive oil
300 g cottage cheese
1 natural yoghurt
3 or 4 eggs
1 tsp. salt
2 tbsp. fresh coriander
shortcrust pastry (one package)
In a medium saucepan put the chopped onion and garlic cloves with the olive oil and let it brown for a couple of minutes. Add the shredded fish and let it cook for 10-15 minutes.
Meanwhile mix the cheese with the yogurt, eggs, and seasonings - salt and coriander until they are thoroughly mixed.
Finally, put the pastry in oven proof dish, cover with cod and on top pour the mixture of cheese.

Bake for 30 to 40 minutes at 200º Celsius degrees, until it is perfectly cooked.
Empadão de Peixe e Cenoura
para 4-6
As receitas têm ido sempre para o peixe e para os vegetais ultimamente. Mesmo que não sendo fresco, é sempre a melhor alternativa à carne. Porque se a carne até há com relativa abundância, o peixe escasseia. Então de qualidade é coisa para esquecer. Contudo sempre dá para alternar a ementa.
ingredientes para o recheio de peixe:
500 gr de filetes de peixe
2 cebolas médias
2 dentes de alho
2 cenouras médias
2 c. de sopa de azeite
1 chávena de leite
2 c. de sopa de farinha maizena
sal e pimenta
Começar por picar a cebola e por num tacho com azeite e o alho. Vai ao lume até ficar
transparente. A seguir juntar cenoura ralada ou raspada. Logo de seguida juntar os filetes de peixe previamente esfiado e deixar cozinhar por cerca de 10 a 15 minutos. Então dissolver a farinha maizena no leite e deitar a chávena de leite ao preparado de peixe e deixar engrossar um bocado, uns 10 a 15 minutos.
ingredientes para o puré de batata:
2 kg de batatas
2 a 3 chávenas de leite
sal
1 c. de chá de noz moscada
Por as batatas descascadas e cortados em pedaços numa panela com água abundante, temperada com sal, durante 20 minutos ou até estarem macias. Assim que estiverem no ponto, retirar a água e deitar uma chávena de leite, a noz moscada e ir esmagando as batatas enquanto se junta o resto do leite, até atingir a cremosidade desejada. Por final retificar os temperos.
Quando o puré estiver pronto, colar uma camada de batata no fundo de uma travessa apropriada para o forno, seguido do recheio de peixe e cenoura e no topo o resto do emapadão de batata. Por fim colocar queijo ralado na hora e orégãos secos. Levar ao forno cerca de 20 a 30 minutos, a 200º graus, até estar gratinado.

I have been cooking some fish an vegetables for the last days because I am tired of meat. I know that the fish is not fresh, because in here is really hard to find, but at least is something diffrent.
ingredients for the fish mixture:
500 g fish fillets
2 medium onions
2 garlic cloves
2 medium carrots
2 tbsp of olive oil
1 cup of milk
2 tbsp of corn starch
salt and pepper
In a medium saucepan put the chopped onion and garlic cloves with the olive oil and let it brown for a couple of minutes. Then add the grated carrots and cook for a couple more minutes and add the shredded fish and let it cook for 10-15 minutes. Meanwhile dissolve the corn starch in a cup of milk and add it to the mixture and cook for 10-15 minutes.

2 kg potatoes
2 or 3 cups of milk
salt
1 tsp of nutmeg
Peel the potatoes and cut into chunks. Put the potatoes into a pan with boiling water and cook until just tender, around 20 minutes. Drain, add a cup of milk, the nutmeg and start mashing. Keep mashing and adding the rest of the milk until smooth.
When the mash is ready, put some mashed potatoes on the bottom of a large oven proof dish, add the fish and carrot mixture and top with the rest of mashed potatoes. Then add some grated cheese and dried oregano. Bake for 20 to 30 minutes at 200º Celsius degrees or until the top is golden.

Esta primeira fotografia é a prova de como sou a única pessoa que pode cozinhar cá em casa! Isto é o resultado de uma tentativa (falhada, parece-me!) de brigadeiros. Brigadeiros preparados no micro-ondas. Depois o salazar para raspar tudo e quando toca a lambuzar o salazar, este tinha derretido. Resultado, brigadeiros com bocados de salazar (delicioso!!) e salazar inutilizável!
Na passada semana inspirado numa receita do livro Fast Food de Gordon Ramsay, noutra do programa Em 30 minutos com Jamie Oliver e numa receita que tinha publicado aqui no blogue, Pernas de frango com alecrim, resolvi assar uns filetes de peixe no forno com uma cobertura de pão ralado.
O resultado foi muito parecido com este, da Joana Roque do blogue As Minhas Receitas. Acreditem que fiz a minha experiência antes de sequer ter sido publicado no seu blogue, mas o resultado foi praticamente o mesmo!
ingredientes:
500 gr de filetes de peixe
3 c. de sopa de azeite
1 limão
sal e pimenta
meia chávena de pão ralado
2 dentes de alho
Num recipiente próprio para o forno por os filetes de peixe e temperar com o azeite, o limão, sal e pimenta e por no forno a 200º graus por 10-15 minutos.
Enquanto isso numa taça misturar o pão ralado, com o alho e temperar com sal e pimenta. Tirar então os filetes do forno cobrir com a mistura e por novamente no forno por mais 10-15 minutos, até estar tostado.

The first picture is the proof as I am the only person who can cook in this home! This is the result of an attempt (failed, it seems!) of brigadeiros (a brazilian sweet). Brigadeiros prepared in the microwave. Then the spatula was used to scrape everything and when it comes to smearing the spatula, it had melted. Result, brigadeiros with bits of spatula (yummy!!) and an unusable spautla!
Last week inspired by a recipe from the book Gordon Ramsay's Fast Food book, by another one from the tv show Jamie's 30 minutes meals and on a recipe that I posted here on the blog, rosemary chicken drumsticks, I decided to cook some fish fillets in the oven with breadcrumbs on top .
The result was very similar to this, from Joana Roque's blog My Recipes. Believe that I made my experience even before it was published on her blog, but the result was pretty much the same!

Put the fish fillets on a oven proof dish and season with the olive oil, the lemon juice, salt and pepper and put in the oven at 200 degrees for 10-15 minutes.
Meanwhile in a bowl mix the breadcrumbs with the garlic and season with salt and pepper. Then take the fillets out of the oven, cover the it with the mixture and place them again in the oven for a further 10-15 minutes, until golden brown.
