sumo de laranja, cenoura e gengibre // orange, carrot and ginger juice

as vezes o pequeno-almoço é mais refastelado. não é sempre que tenho tempo de preparar algo tão elaborado. quantas vezes é saltar da cama e fazer tudo a correr. porém, outras dias são calmos, com tempo até de preparar um sumo e continuar a leitura de cabeceira. como este. neste dias frios de inverno. sem neve. a menos de um mês do final e nada de neve. mas se tempo tenho, então há que preparar algo reconfortante para acompanhar a granola caseira.

sometimes breakfast is something bigger. not always I have time to prepare something like this. how often is to jump out of bed and running to do everything. but other days are quiet, with time to prepare a fresh juice and continue the bedside reading. like that day. in this cold winter days. without snow. less than a month to end and without snow. but if I do have time, then I need to prepare something comforting to accompany the homemade granola.

agora que passou o dia de "desbunda". enquanto se espera pelo primeiro do ano, para voltar a repetir a dose, o melhor é escolher algo mais leve. porque aqui cumpre-se a regra e celebra-se tal e qual como se em portugal me encontrasse. rabanadas, mexidos, bolo-rei, ovos moles, bacalhau, perú, castanhas, queijo amanteigado, vinho do porto e tal. presentes à meia-noite. tardes de filmes. chá para aliviar e poder voltar à carga. essencialmente, dias preguiçosos.

now that the day is gone. while I wait for the first day of the year, to do it all over again, it's better going for something lighter. the rule here is to celebrate like in portugal. 'rabanadas', 'mexidos', 'bolo-rei', 'ovos moles', cod, turkey, chestnuts, cheese, porto wine and et al. opening the gifts at midnight. afternoon movies. tea to clean and allow us to attack again. essencially, lazy days.

entre perãs, maçãs, cenouras, cebolas e abóboras. é disto feito o outono. de crumbles, sopas, assados e outros. depois do doce, sobrou ainda abóbora. há sempre tempo para uma outra investida na cozinha. uma sopa de abóbora. algo tão comum.

frittata de cenoura // carrot frittata

esta receita foi feita para participar especialmente neste desafio, Dia Um... Na Cozinha. e serviu para dar o mote e experimentar fazer uma frittata. tantas vezes assinaladas nos livros. tão apelativas. ainda assim, não antes havia tentado. e não sei porque não, tão simples. dá aquela sensação boa de tudo feito no mesmo "tacho".

foi de cenoura, porque estão agora em época e já as tinha trazido do mercado. como deixei para o último dia para participar e não tinha mais nada em vista, assim foi. 

made this recipe to participate in this challenge Dia Um... Na Cozinha (in portuguese!). and served as an excuse to try to make a frittata. so many times marked in books. so appealing. still, never done before. and I do not know why, so simple. gives that warm feeling of a one-pot food.

made with carrots because is their season and bought them other day at the market. I left to the very last day to participate in the challenge and I did not know how to do it, but here it is.

Finalmente começa a ficar "quente" o suficiente para andar assim mais à primavera. Eu já contei que tinha ido ao Ikea. O objectivo tinha sido comprar mobiliário de jardim, para o pátio das traseiras e ontem dei-lhe uso. 

Entretanto esta receita é da semana passada. É para a primavera e para almoços descontraídos lá fora no pátio.

ingredientes:

4 wraps (pré-comprados)

1/2 pepino

1 cebola

1/2 alface iceberg

1 cenoura

100 gr de queijo ralado

maionese q.b.

salsa fresca q.b.

Começar por deixar todos os ingredientes prontos a utilizar. Cortar o pepeino em rodelas finas, a alface em tiras de 1 cm, a cebola cortada à metade e depois em tiras finas, a cenoura ralada grosseiramente assim como o queijo. À parte misturar a maionese e a salsa, a gosto.

Seguir as indicações da embagalagem de wrap, neste caso foi aquecer. Depois barrar com o molho de maionese, colocar os ingredientes no topo, pepino, cebola, alface, cenoura e queijo e embrulhar.

Finally starts getting "warmer" enough to enjoy spring. I told you that I went to Ikea. The point was to buy garden furniture to my backyard and yesterday I used it.

In the meantime, this recipe is from last week. Is for spring and for relaxed lunches outdoors.

ingredients:

4 wraps (ready made)

1/2 cucumber

1 onion

1/2 iceberg lettuce

1 carrot

100 g grated cheese

mayonaise

fresh parsley

Start by preparing all the ingredients. Cut the cucumber in slices, the onion in half and then in slices, the lettuce in 1cm slices, grate the carrot and the cheese. On the side mix the mayonaise and the fresh parsley.

Then follow the instruction of the pack, in the case was to warm up the wrap. Now spread some mayonaise sauce on the wrap, put the ingredients on top, cucumber, onion, lettuce, carrot and cheese and wrap it.

Empadão de Peixe e Cenoura / Fish and Carrot Pie

Empadão de Peixe e Cenoura

para 4-6

As receitas têm ido sempre para o peixe e para os vegetais ultimamente. Mesmo que não sendo fresco, é sempre a melhor alternativa à carne. Porque se a carne até há com relativa abundância, o peixe escasseia. Então de qualidade é coisa para esquecer. Contudo sempre dá para alternar a ementa.

ingredientes para o recheio de peixe:

500 gr de filetes de peixe

2 cebolas médias

2 dentes de alho

2 cenouras médias

2 c. de sopa de azeite

1 chávena de leite

2 c. de sopa de farinha maizena

sal e pimenta

Começar por picar a cebola e por num tacho com azeite e o alho. Vai ao lume até ficar transparente. A seguir juntar cenoura ralada ou raspada. Logo de seguida juntar os filetes de peixe previamente esfiado e deixar cozinhar por cerca de 10 a 15 minutos. Então dissolver a farinha maizena no leite e deitar a chávena de leite ao preparado de peixe e deixar engrossar um bocado, uns 10 a 15 minutos.

ingredientes para o puré de batata:

2 kg de batatas

2 a 3 chávenas de leite

sal

1 c. de chá de noz moscada

Por as batatas descascadas e cortados em pedaços numa panela com água abundante, temperada com sal, durante 20 minutos ou até estarem macias. Assim que estiverem no ponto, retirar a água e deitar uma chávena de leite, a noz moscada e ir esmagando as batatas enquanto se junta o resto do leite, até atingir a cremosidade desejada. Por final retificar os temperos.

Quando o puré estiver pronto, colar uma camada de batata no fundo de uma travessa apropriada para o forno, seguido do recheio de peixe e cenoura e no topo o resto do emapadão de batata. Por fim colocar queijo ralado na hora e orégãos secos. Levar ao forno cerca de 20 a 30 minutos, a 200º graus, até estar gratinado.

Fish and Carrot Pie

serves 4-6

I have been cooking some fish an vegetables for the last days because I am tired of meat. I know that the fish is not fresh, because in here is really hard to find, but at least is something diffrent.

 

ingredients for the fish mixture:

500 g fish fillets

2 medium onions

2 garlic cloves

2 medium carrots

2 tbsp of olive oil

1 cup of milk

2 tbsp of corn starch

salt and pepper

In a medium saucepan put the chopped onion and garlic cloves with the olive oil and let it brown for a couple of minutes. Then add the grated carrots and cook for a couple more minutes and add the shredded fish and let it cook for 10-15 minutes. Meanwhile dissolve the corn starch in a cup of milk and add it to the mixture and cook for 10-15 minutes.

ingredients for the potato mash:

2 kg potatoes

2 or 3 cups of milk

salt

1 tsp of nutmeg

Peel the potatoes and cut into chunks. Put the potatoes into a pan with boiling water and cook until just tender, around 20 minutes. Drain, add a cup of milk, the nutmeg and start mashing. Keep mashing and adding the rest of the milk until smooth.

When the mash is ready, put some mashed potatoes on the bottom of a large oven proof dish, add the fish and carrot mixture and top with the rest of mashed potatoes. Then add some grated cheese and dried oregano. Bake for 20 to 30 minutes at 200º Celsius degrees or until the top is golden.

A receita aqui apresentada vem ligeiramente adaptada da original de legumes porque no mercado só encontrei esta versão de abóbora – que segundo a minha mãe é a abóbora-menina em Portugal. Contudo o resultado foi bastante agradável, com o seu travo algo adocicado.

Esta sopa, serve para relembrar os tempos de criança em que “odiava” sopa. Como muitas crianças à época, a sopa não era o meu prato preferido, daí que a minha mãe tinha esta solução: sopa creme de legumes. Esta mistura, toda triturada e acompanhada de pão (um cacete de preferência) era um regalo, desde que cumprisse a condição essencial de ser cor-de-laranja.

[Passados tantos anos, continuo a devorá-la da mesma forma – molhando o pão na sopa. Sim o cacetinho todo, demoro uns 15 minutos só para comer a sopa.]

ingredientes:

250 gramas de butternut squash

250 gramas de couve-flor

3 cenouras

2 batatas

1 cebola

1300 ml de água

2 c. chá de sal (não muito cheias)

2 c. sopa de azeite

Começar por descascar e descaroçar a abóbora (butternut squash), guardar a parte que não vai ser utilizada (podendo ser congelada) e cortar em pedaços os 250 gramas para a sopa. De seguida separar os ramos da couve-flor e os restantes legumes – cenouras, batatas e cebola – descascar e cortar em pedaços [lava-los todos bem em água].

Juntar todos os legumes – butternut squash, couve-flor, cenouras, batatas e cebola – numa panela com 1300 ml de água e temperada com sal. Deixar levantar fervura e depois cozer durante 30 minutos [até os legumes estarem tenros].

No final juntar o azeite e triturar com a varinha mágica até estar cremoso.

Pode-se adicionar algum cebolinho na hora de servir.

Butternut Squash Cream Soup

6 portions - serves 6

The recipe presented in here is slightly adapted from the original of vegetables because in the market I only found this type of pumpkin – that my mom says that in Portugal is “abóbora-menina”. However the result was amazing with a sweet taste.

This soup reminds me from my child days when I “hated” soup. As a lot of children at the time, soup was not my favourite dish so my mom always came with this solution: vegetables soup. This creamy mix with bread (French baguette) on the side was a real treat as long as fulfilled the essential condition of being orange.

[After so many years, I still like to eat it in the same way – dipping the bread into the soup. Yes, the whole baguette – it takes me like 15 minutes to eat the soup.]

ingredients:

250 g butternut squash

250 g cauliflower

3 carrots

2 potatoes

1 onion

1300 ml water

2 tsp. sea salt (not too full)

2 tbsp. extra virgin olive oil

Start by peeling and de-seeding the butternut squash, save the part that you are not going to use (may be frozen) and cut into chunks the 250 g for the soup.  Cut the cauliflower in little parts and peel and cut into chunks the rest of the vegetables – carrots, potatoes and onion [wash everything in water].

Then put all of the ingredients – butternut squash, cauliflower, carrots, potatoes and onion – in a large saucepan with 1300 ml of water with salt. Bring to the boil and simmer for 30 minutes [until the vegetables are soft].

At the end put the extra virgin olive oil and grind the soup with a hand blender until it is creamy and smooth (like a purée).

Before serving you can add some chopped chives on top.
