my last recipe before my holidays in portugal. this wednesday. a winter recipe. a simple cake. very simple. orange curd to give it a flavour burst. a recipe from my grandmother. but the orange curd is mine. a sunday recipe. with a nice coffee on the side. while lana del rey is playing.

'silver cake'
makes 1 cake

to make this cake I used this simple cake recipe that uses all your left egg whites and I made a orange curd that leaves the cake very moist. the remaining curd can be used with greek yoghurt for breakfast, to spread on scones or any other recipe.

ingredientes:

125 g butter
250 g sugar
7 egg whites, whipped
160 g plain flour
1 tsp. baking powder

Start by beating the butter really well. Then add the sugar and keep beating for another 10 minutes until light and fluffy. Add the whipped egg whites and then gradually involve the flour and baking powder.
Bake in a preheated oven at 180 º Celsius degrees for 25 minutes on a baking tray greased with butter and flour.
Allow it to cool down before spreading the orange curd on top.
Then spread a few tablespoons of orange curd over the cake.

orange curd
makes 1 jar

ingredients:

2 oranges
70 g unsalted butter
300 g sugar
3 eggs, lightly beaten

Squeeze the juice of the 2 oranges to a saucepan, add the butter, sugar and eggs. Bring to low heat and keep stirring very carefully, until the mixture is thick - around 10 minutes. At the end, before pouring into a jar, strain if necessary.
