caracóis de canela // cinnamon rolls

quinta-feira. ontem. depois de muito argumentar, lá consegui a consulta no médico. chegar a casa e preparar um almoço simples. um panini à italiana, inspirado no livro que trouxe de milano. adoentado e ainda assim resolvi preparar este bolos de canela. as fotografias já estavam tiradas. já tinha feito esta receita anteriormente. para levar para o trabalho. há que "conquista-los" por algum lado. pela culinária parece-me um bom caminho. e se da outra vez ficaram bons, desta também. hoje de manhã, são o pequeno-almoço. 

thursday. yesterday. after arguing at my local health center, I got a doctor's appointment. get home and prepare a simple lunch. an italian panini, inspired in the book that I brought from milano. sick but ready to prepare this cinnamon rolls. the pictures were taken on another time. I made this recipe before already. to take to my workplace. got to make them love me. by cooking something seems a good path. and if last time they were good, this one too. this morning, they are my breakfast.


caracóis de canela com sultanas e sementes de papoila
para 20-24

ingredientes:
500 gr farinha
2 saquetas de fermento (7gr)
4 c. sopa açúcar
1 pitada sal
50 manteiga sem sal
2 ovos, ligeiramente batidos
250 ml leite, temperatura ambiente

recheio de canela
100 gr manteiga sem sal, temperatura ambiente
4 c. sopa canela em pó
100 gr açúcar
100 gr sultanas
1 c. sopa sementes papoila

Numa taça misturar a farinha e o fermento. Depois adicionar o açúcar, a pitada de sal, a manteiga partida aos bocados e depois os ovos e o leite e amassar durante uns 5 minutos até a mistura formar uma massa homogénea. Formar então uma bola e deixar a levedar por 45 minutos, tapada com um pano.
Quando a massa estiver pronta, estender em forma de rectângulo.
Preparar então o recheio, misturando a manteiga, com a canela e o açúcar.
Cobrir a massa com a mistura de canela e espalhar as sultanas por cima. Enrolar a massa a partir do lado mais largo do rectângulo e selar.
Cortar então o rolo em fatias de 2 cm de espessura, colocar num tabuleiro resguardado com papel vegetal, espalhar as sementes de papoila por cima e levar ao forno a 180º graus por 20 minutos. Retirar quando começarem a ficar dourados.

cinnamon rolls with sultanas and poppy seeds
makes 20-24

ingredients:
500 g white strong flour 
2 sachets dried yeast (7 g)
a pinch of salt
50 unsalted butter
2 eggs, lighlty beaten
250 ml milk, room temperature

cinnamon filling
100 g unsalted butter
4 tbsp. ground cinnamon
100 g sugar
100 g sultanas
1 tbsp. poppy seeds

In a bowl mix the flour and the yeast. Then add the sugar, pinch of salt, butter cutted in pieces and then the eggs and milk. Knead for about 5 minutes until the mixture forms a homogenous dough. Make a ball and let it rise for 45 minutes, covered with a cloth.
When the dough is ready, roll and stretch into a rectangle shape.
Then prepare the filling, mix the butter with cinnamon and sugar on a bowl.
Spread the cinnamon mixture all over the dough and spread the sultanas on top. Roll up the dough, starting from the long edge and seal it.
Now cut the roll into 2 cm thick with a sharp knife and place them into a tray with baking paper and bake in the oven at 180º Celsius degrees for 20 minutes. Remove when they are slightly golden brown.
