Legumes Assados no forno
para 2-3

É uma receita simples e praticamente infalível. É um bom acompanhante de carnes assadas no forno.
Como tinha ido ao mercado e tinha então um "excesso" de legumes, resolvi a questão desta forma, legumes assados.

ingredientes:
1 beringela
1 curgete
2 cenouras
1 cebola
1 pimento amarelo
1 pimento laranja
1 pimento verde
3 dentes de alho
1 c. chá de sal
alecrim (q.b.)
1 c. sopa de azeite

Começar por lavar os legumes muito bem. Depois basta cortar os legumes - beringela, curgete, cenouras, cebola e pimentos - às rodelas, relativamente finas, e por num recipiente próprio para ir ao forno. Esmagar o alho e espalhar por cima da mistura de legumes e adicionar o sal.
Levar ao forno a 220º por 40 minutos, até os legumes estarem assados e ir virando-os de vez em quando.
Na hora de servir adicionar alecrim e o azeite.

Roasted Vegetables in the oven
serves 2-3

This is a really simple recipe. It goes really well with roasted meat in the oven.
I went to the market and I had a lot of vegetables at home so I decided to make some in the oven. 

ingredients: 
1 aubergine 
1 courgette
2 carrots
1 onion
1 yellow pepper
1 orange pepper
1 green pepper
3 garlic cloves
1 tsp. sea salt
rosemary
1 tbsp. extra virgin olive oil

Start by washing the vegetables properly. Then just cut the vegetables – aubergine, courgette, carrots, onion and peppers - in slices relatively thin and put in an oven proof dish. Crush the garlic and spread over the vegetables mix and add the salt on top.
Bake for around 40 minutes in the oven at 220º Celsius until the vegetables are roasted and do not forget to turning them around occasionally.
Just before serving add the rosemary and the olive oil. 

tip
.if too many vegetables leftover, then use as a pizza topping
