para 2 pizzas

pizza, pizza, pizza!!

o tempo estava bom. eu queria fazer algo que já não fazia há algum tempo. vai daí, pizza! pensei em fazer a combinação que experimentei em Roma. presunto com rúcula. achando que ainda tinha presunto português. pois, mas não! contudo, tinha azeitonas para gastar. deu uma boa combinação com a cebola roxa. algumas folhas de manjericão. outras de rúcula. bem depois de sair do forno. e foi boi bom para aproveitar os raios de sol quentes da hora de almoço.

a receita da massa da pizza, já tinha sido publicada aqui no blog. mas volto a publicar, pois foi há cerca de um ano atrás (wow!).

ingredientes para a massa (duas pizzas médias):

500 gramas de farinha tipo ’00’ ou farinha branca forte

2 c. de chá de sal,

1 c. de chá de fermento em pó

300 ml de água tépida

20 ml de leite

1 batata pequena cozida

Primeiro peneirar a farinha para uma taça e juntar o sal e o fermento. De seguida fazer um furo no meio e juntar a água e o leite e gradualmente ir incorporando os ingredientes com um garfo até ficar consistente ao ponto de ser amassado com as mãos. Enquanto isto, ao lado esmagar bem a batata cozida e juntar à massa. Agora amassar durante 5/10 minutos com as mãos, até ficar elástica.

Findo este processo, colocar a massa num recipiente, tapar bem com um pano de cozinha e deixar levedar num local morno e seco entre 30 minutos a 1hora, ou até dobrar de tamanho.

Quando a massa estiver pronta, dividir em 2 bolas mais pequenas e preparar a base da pizza. Comece por polvilhar com farinha a superfície onde irá ser estendida e distenda até ficar com uma forma redonda, com 0,5 cm de espessura e deixar com 2 de rebordo.

Agora é só por em papel vegetal polvilhado com farinha, rechear e levar ao forno durante 20 minutos a 220º graus até ficar estaladiça.

Ingredientes para o molho de tomate (duas pizzas):

2 c. de sopa de azeite

1 dente alho

120 gramas de tomates

2 c. de chá de manjericão seco (ou folhas de manjericão fresco)

sal e pimenta preta moída na hora

Refogar o alho com o azeite num tacho e de seguida juntar os tomates cortados em pedaços, o manjericão e temperar com sal e pimenta.

Cozinhar por 20 minutos, enquanto se vai triturando os tomates, até ficar cremoso.

Ingredientes para o recheio (duas pizzas):

2 cebolas roxas cortadas às fatias

1 punhado de azeitonas

folhas de manjericão fresco

folhas de rúcula

Quando a massa e o molho estiverem prontos, basta por o molho de tomate na pizza e rechear o topo com as cebolas (uma por pizza!) e as azeitonas. Levar ao forno por 20 minutos, a 220º, até estar estaladiça e a massa bem cozinhada. Antes de servir por o manjericão por cima numa pizza e na outra rúcula.

the weather was good. i wanted to do something that haven't done in while. so there you go, pizza! i thought about the combination that I tried in Roma. prosciutto and wild rocket leaves. i thought that i had portuguese prosciutto. well, i had not! anyway, i had olives. a good combination with red onion, must say. some fresh basil. some wild rocket leaves. on top. and was really good to enjoy the lunch time's sunshine.

the pizza dough recipe was already published on the blog. but i will do it again because was about a year ago (wow!)

ingredients for the dough (makes two pizzas):

500 g '00' flour type or strong white bread flour

2 tsp. salt

1 tsp. of dried yeast

300 ml lukewarm water

20 ml milk

1 small boiled potato

At first pile the flour into a bowl and add the salt and the yeast. Then make a well in the middle and add the water and the milk and gradually mix the ingredients with a fork until consistent to the point of being ready to do it with your hands. Meanwhile, smash the boiled potato and add it to the dough. Now knead the dough for 5/10 minutes until elastic.
After this process, place the dough in a bowl, cover well with a kitchen towel and let it rise in a warm, dry placebetween 30 minutes to 1 hour, or let double in size.

When the dough is ready, divide it into 2 small balls and start making the pizza base. Start by dusting your surface with flour and roll it out into a circle, with 0,5 cm thickness and 2 cm thick bead on the edge.

Now you put the pizza base on a baking paper dusted with flour, stuff it and bake in the oven at 220º Celsius degrees for 20 minutes until it is crispy.

ingredients for the tomato sauce (two pizzas):

2 tbsp. olive oil

1 garlic clove

100 g chopped tomatoes

2 tsp dried basil (or fresh basil leaves)

sea salt

freshly ground black pepper

Heat a saucepan on a medium heat with olive oil and the garlic. Cook for about 3 minutes and add the chopped tomatoes, the basil and season it with salt and pepper. Cook it for about 20 minutes while you mashes the tomatoes until becomes smooth.

ingredients for the topping (two pizzas):

2 red onion cut into wedges

a handful of olives

fresh basil leaves

wild rocket leaves

When the pizza base and the tomato sauce are ready, top it with tomato sauce and garnish with the onion (one for each pizza) and some olives. Bake in the oven for 20 minutes until it is crispy and the dough well cooked. Before serving add the basil and the wild rocket leaves on top.
