não há Natal sem aletria. não há mesa de Natal sem aletria. ou não há para mim, mesa de Natal sem aletria. sem a aletria de ovos da minha mãe. porque era este o meu doce preferido de Natal quando era criança. quando o bolo rei ou as rabanadas ainda não me despertavam interesse. aletria e apenas aletria. também gostava das outras versões. consideradas mais pobres. também gostava das outras que havia pela casa da minha avó. mas gostava muito mais da que a minha mãe fazia. porque ela adicionava mais gemas só para ficar bem amarelinha como eu gosto. e é até hoje o doce que mais me lembra o natal na casa da minha avó. quando éramos tantos que mal cabíamos à mesa. que me relembra todos aqueles momentos. e que me faz voltar à mesa na noite de consoada.

there is no Christmas without 'aletria'. there is no Christmas table without 'aletria'. or to me, there is no Christmas table without 'aletria'. without 'aletria' made with eggs by my mom. because this was my favourite Christmas treat when I was a kid. when 'bolo rei' or 'rabanadas' weren't for me. 'aletria' and only 'aletria'. I also liked the other versions. considered poorer. I also like the other ones that were at my grandmother's house. but I preferred my mom's one. because she added more egg yolks to be yellowish, just how I like it. and until today is the treat that reminds me more of Christmas at my grandmother's house. when we were so many that we didn't fit at the table. that reminds me of all those moments. and makes me wanna go back to the table on Christmas eve.

esta receita contou com a ajuda preciosa da minha mãe. porque eu até hoje ainda não consegui replica-la. não, de forma a ficar como a dela. desta vez fui mais aluno e observador.

ingredientes:

110 g aletria
água a ferver (q.b.)
130 g açúcar
100 ml água
8 gemas de ovos
pau de canela
1 raspa de limão

Começar por colocar a aletria numa taça e partir em bocado pequenos. Adicionar a água acabada de ferver e deixar escaldar por 1 minuto a 1 minuto e meio, depois escoar e reservar. Enquanto isso adicionar num tacho 130 g de açúcar e 100 ml de água (que deverá ser o suficiente para cobrir o açúcar), levar a lume médio/brando durante cerca de 2 minutos, apenas o suficiente para chegar a quase ponto. Adicionar então a aletria a este preparado. Continuar em lume brando sempre a mexer, até estar bem envolvido por mais 2/3 minutos.
Retirar o tacho do lume e ir vertendo para as gemas (que deverão estar numa taça, ligeiramente batidas e envolvidas com uma colher), aos poucos de cada vez enquanto se vai mexendo sempre para não 'talhar'. Depois de tudo envolvido, voltar a colocar o preparado no tacho e por o tacho em lume brando por mais uns minutos. Adicionar o pau de canela e a raspa de limão e ir mexendo sempre até se começar a ver o fundo do tacho e a 'fazer estrada'.
Colocar numa taça e deixar arrefecer antes de polvilhar com canela em pó.

it's a typical portuguese christmas dessert, make with capellini pasta or sometimes called 'angel hair pasta' because it's really thin. this is a sweet version of this 'pasta dish'.

ingredients:

110 g 'aletria'
boiling water
130 g sugar
100 ml water
8 egg yolks
cinnamon stick
slice of lemon zest

Start by placing the 'aletria' in a bowl and break into small pieces. Add the boiled water and leave it to simmer for 1 minute, 1 minute and a half, then drain and set aside. Meanwhile in a saucepan add 130 g of sugar and 100 ml of water (which should be just enough to cover the sugar), place over medium/low heat for about 2 minutes, to boil but not to caramelize. Then add the 'aletria' to this mixture. Place it again over low heat, keep stirring for about 2/3 minutes until well involved.
Remove the pan from the heat and slowly start pouring the mixture into the egg yolks (which should be in a bowl, slightly beat and involved with a spoon), little at a time while stirring constantly to not 'chop'. After all involved pour it again to the saucepan and place again the saucepan over low heat for just a few more minutes. Add the cinnamon stick and the slice of lemon zest and keep stirring until you can see the bottom of the pan.
Place in a flat bowl or serving dish and let it cool down before sprinkling it with ground cinnamon.
