queques á la madaleine com amoras
para 6-8 queques

sexta-feira de folga em Dublin foi bom bom. como sempre. mas não há nada melhor do que ter duas folgas juntas. sábado foi noite de saturday night fever com a bebida ultrapassando a conta, fazendo com que domingo fosse dia de ressaca e acordar tardio. levantar tarde é práticamente sinónimo de brunch. mas com a falta de ideias, a ida ficou-se por um restaurante relativamente novo de comida saudável. foi bom, nada de espectacular, mas com um sumo fresco de laranja e melancia capaz de curar qualquer um e a um preço razoável. ora segunda, foi dia de puro relaxar e dedicado a jornais, revistas, livros, culinária e fotografia. happy days, diriam eles.

na busca de algo doce para cozinhar encontrei a receita queques á la madaleine no compêndio de receitas de família. a receita era simples, sem as amoras. mas eu tinha amoras e queria utiliza-las. adicionei-as e fiquei agradecido por tal. agradecido também à Madaleine, seja quem for!

ingredientes
60 gr de manteiga
125 gr farinha
150 gr açúcar
3 gemas
3 claras batidas em castelo
1 raspa de limão
1 mão cheia de amoras

Primeiro de tudo, forrar uma forma de queques com papel vegetal e aquecer o forno a 180º.

Começar por preparar as claras em castelo e reservar.
Derreter a manteiga em banho maria e juntar aos outros ingredientes - farinha, açúcar, gemas e raspa de limão. Juntar as claras em castelo e bater tudo durante 10 minutos e por fim adicionar as amoras.

Levar ao forno a 180º graus por 25 a 30 minutos. Nos últimos 10 minutos, adicionar açúcar por cima dos queques.

friday off from work in Dublin was good, really good. as always. but there is nothing better then having two days off together from work. saturday night was like saturday night fever and i drunk a little bit too much and turning my sunday into a hangover day and late wake up. waking up late is synonymous of brunch. with the lack of ideas, I went for a relatively new, healthy food restaurant. was good, nothing spectacular, but with a watermelon and orange fresh juice that can cure anyone and at a reasonable price. so monday was a pure relaxing day for newspapers, magazines, books, cooking, photography. happy days, they would say.

in my search for something sweet I found this recipe of queques (muffins/cupcakes) á la Madaleine in my family recipes compendium. the recipe was simple, without the blackberries. but I had blackberries and wanted to use them. I added them and I was grateful for that. also grateful to Madaleine, whoever is!

ingredients
60 g unsalted butter
125 g plain flour
150 g sugar
3 egg yolks
3 egg whites - whipped eeg whites
1 zest of lemon
handfull of blackberries

First of all line a muffin tin with baking papers and preheat the oven to 180º Celsius degrees.

Start by beating the egg whites separately until you have whipped eeg whites and set them aside.
melt the butter in water bath and combine in a bowl with the other ingredients - flour, sugar, egg yolks and the lemon zest. Add the whipped egg whites and mix until it's combined, it will take around 10 minutes. At the end add the blackberries.

Bake for 25-30 minutes at 180 Celsius degrees until a toothpick comes out just clean. On the last 10 minutes top them with some sugar.
