lavender shortbread
makes 25

a typical scottish recipe and especially good with coffee in spring.

ingredients:

100 g unsalted butter, room temperature
50 g caster sugar
1 tbsp. lavender
150 g plain flour

Pre-heat an oven to 180º Celsius degrees and line a baking tray with baking paper.
In a food processor mix the butter and sugar until fluffy. Then add the lavender. Lastly involve the flour to the mixture with a wooden spoon to make a dough with a crumbly texture.
Then knead the mixture and make a ball with the dough (don't overwork knead the dough).
Sprinkle with flour the surface where the dough will be rolled out and roll out the dough with a rolling pin until 0,4 cm thick.
Use a round shape cutter (about 5 cm diameter) to cut the biscuits and place them on the baking tray. Then with a small stick make 4 small holes in each biscuit.
Bake for 15-20 minutes in the oven. Once they are ready, sprinkle each biscuit with more sugar while they are still hot.

Bom Apetite!
